Cooking with Wine, Potassium Levels ?

One of my favorite things to cook with is wine, however my partner has recently been diagnosed with Kidney failure and has commenced dialysis for the condition.
One of the big no no's for this condition is potassium which of course is quite high in all variants of wine.
What I would like to know is if the potassium levels in wine alter at all during cooking.
Is there anyone there that can add to this ?
