Daniel Thibault's chart on protein changes in autolysis

I am interested in finding a chart on the effects of autolysis on proteins in the ageing of sparkling wine on yeast lees. I have seen reference to the chart by Daniel Thibault (of Charles Heidseck) but I can't seem to get it off the Internet. Is anyone able to suggest other places that I could try?
