Never made a mead or wine yet, but was going to make the apple wine recipe thats posted. Can I use a 5 gallon carboy or would I need a larger 6.5 for this like beer. Just unaware how crazy fermentation will get. Also how long do I let it ferment?

Hi Gabe - our partner website http://www.visitvineyards.com has 89 wine producers listed in Mudgee. Some of the picks are: Andrew Harris Wines, Botobolar, Broombee Organic Wines (if you are looking for organics), Burrundulla, Frog Rock, High Valley (also make great cheese), Huntingdon Estate (probably the standout - medium sized), Lowe Family Wines (also v good quality), Mudgee Growers and Simon Gilbert. Moothi Estate is a micro-boutique winery worth looking at.
Lauralla Guest House is an excellent place to stay. And if you get as far as Cowra, dine at Neila. There are video interviews of several Mudgee winemakers plus some restaurateurs and food producers on the VisitVineyards.com site also; go to 'view videos' on the RHS and select NSW Central Ranges, and check 'videos' (or panoramas if you want to see the views).
