I would like to have your feed back regarding to cellaring wines under the house. I am cellaring all my wines under the house and it seemd to keeps the temperature fairly constant but i have to buy a proper thermometer to check it temp variations but so far doesnt look like fluctuate alot. Is this good idea or should i move them to temp controlled room
Has anyone tried and find effective for long term cellaring under their houses? If not, i have move them to temp controlled room.

Any feed back would be appreciated

Put down a synthetic tarpaulin first to protect the cartons.Temperature should not fluctuate more than a couple of degrees as the most important thing is stable temperature.If big fluctuation occurs so does the pressure inside the bottle with resultant weeping, ullage and spoilage.With a temp. thats too high (above 19+ degrees)accelerated aging will occur but if its fairly constant you wont "lose" the wine.Newspaper is a great insulator (street people use it for blankets) and wrapping bottles can be a way of keeping temp. down and constant(if label damage is a concern from possible ink transfer from the paper use plain butchers paper as a first layer. Humidity should be at least 50-60%.Remember that its quite a bit cooler at floor level (ground level is even better!) than on a shelf in a cupboard or elsewhere so beneath the floor is a great option.The Egan Corporation Ph.Sydney 1 800 999 463 sell a great little temperature/humidity unit that holds a record of minimum and maximum readings over a period. Ive found it to be great and accurate. Around $50+ and well worth it. Cheers!!

I have been storing my wine under the house for about 10 years. I find the the temp. does vary through the seasons, however the changes are very gradual.

The only problem I have discovered is that some times the moisture will cause mould to form either around the cork or on the label.

I think you should make sure that you store your wine in a dry area. smile.gif

Have had an under house cellar for the last 20 years. Dont get too worried. As long as the change is constant you should not have many problems.
