Preserving the Italian Way – Pietro Demaio
Traditional Italian style cooking
Contributed articles and stories
Preserving the Italian Way by Pietro Demaio is a collection of traditional Italian recipes for homemade foods including preserves, cheese, salami, liqueurs and wines, bread and herb soaps.
It was compiled to record the way these items have been made by Italian family members for posterity – ways that are literally dying out when relatives and friends age.
Pietro Demaio has sourced these recipes straight from the people who remember how to make them – while they still can! Often there are alternative recipes dependent on what style or region you’d like to emulate. The recipes are recorded 'warts and all' obviously transcribed from word of mouth in many instances.
This book is a priceless gem for those who wish to learn the secrets of old fashioned Italian style cooking and preserving and preserving the 'Italian Way'.
