A self-taught cook and sustainable food advocate, Kate Walsh is shining a spotlight on simple ways to transform how we cook, shop and think about food.

Working on organic farms and with Slow Food USA instilled in Kate a dedication that sparked the creation of Real Food Projects, an active community of chefs, growers, foragers, butchers and eaters.

For too long, Walsh says, we've been sold the idea that making our own food is difficult, time-consuming and not worth the effort. But learning how to cook a few kitchen staples from scratch, using fresh local and seasonal produce, is the best way to improve our health and our food system.

Real Food Projects is your handbook to 30 essential cooking skills. Granola, butter, cheeses, no-knead bread, fruity cordials, sausages – these are just a few projects and most importantly, all these homemade products taste better than anything you can buy at the supermarket.

There’s no need for big, fancy kitchen equipment either – Walsh encourages everyone to start with a large bowl and a wooden spoon and go from there.

To make it even more accessible, step-by-step instructions and photographs are included for all 30 projects. There are 46 recipes to try out your new kitchen skills too – make an autumnal crumble with your granola, feast on bim bim bap with your newly fermented kim chi and host a gravlax party with delicious cured salmon that doesn’t cost the earth!

Kate Walsh has travelled the world designing and running campaigns for environmental non-profits and ethical businesses such as Climate Friendly, World Wildlife Fund, Food Democracy Now and Slow Food International. This campaign work led her to create her own grass roots movement with Real Food Projects, which run classes in Sydney and Byron Bay.

When not teaching, Kate spends her time writing, feeding a hungry toddler and cooking. Lots and lots of cooking.
