This factsheet explains why olive oil - high in antioxidants - is good for you, that contrary to popular belief it CAN be used for shallow or deep frying (and making chips), and the differences between extra-virgin olive oil (EVOO), virgin olive oil and refined olive oil.

It also explains the labelling of both imported and Australian olive oils. It was produced by Olives South Australia Inc for the Australian Olive Association, based in Sydney.
