The Source Restaurant, located at Moorilla Estate, near Hobart in Southern Tasmania, is at the forefront of the Moorilla experience engaging diners with an international gaze informed by the local environment.
Principles that are of great importance to the kitchen include seasonality, sustainability of natural resources, food miles and significantly, the use of local products from small producers.
The kitchen consults with a growing network of small suppliers who form the backbone of the operation. The Source's menu encourages the diner to graze outside the three course structure and design their own meal.
The Source by John Olsen
Set into the ceiling directly above the central staircase is John Olsen's six metre painting, The Source.
In 1957, Olsen went to Europe and on the Spanish island of Majorca began a love affair with a culture that venerated the sun, especially in its food and wine. Forty five years later, under the Australian sun, this influence still guides his work.
