ROCKET AND MINT HUMMUS
Vegetarian, gluten free and dairy free. Eating foods in their raw form is great for those on a cleanse because it means that the food is jam-packed full of nutrients and enzymes which help us to digest food.
Ingredients:
- 2 cups of cooked chick peas
- 2 good luggs of extra virgin olive oil
- juice of 1 lemon (or lime)
- 3 cloves of roasted garlic
- a good handful of mint leaves (approx 15 leaves)
- a good handful of rocket leaves
- sea salt
- pinch of cumin powder
- avocado oil or lemon or lime juice to drizzle
- pinch of sumac to serve (optional)
Method:
This is easy-peasy! Whizz all ingredients in a blender and serve. Drizzle with avocado oil, a squeeze of lime or lemon juice and sweet paprika for colour. Great to have with celery and carrot or on organic sourdough toast.
