On Monday 4th August James Halliday visits Oyster Little Bourke for an evening, offering a taste of his profound wine knowledge and his entertaining anecdotal stories about the world of wine - as he launches his 2009 Companion. James will also present a legendary ‘Wine Options game' made so popular by his long time friend, the late Len Evans AO OBE.
During the 4 course dinner we may not cover every one of the 5778 wines in James' latest tome but we will be enjoying wines from his iconic Coldstream Hills vineyard. Oyster's Luke stringer has matched the best Coldstream Hills wines to chef Joseph Vargetto's set menu, beginning with a Coldstream Hills Sparkling Pinot Chardonnay.
The menu then features –
* Pan fried scallops with crab waldorf salad and green apple sorbet, matched to an 07 Sauvignon Blanc
* A Moreton Bay Bug tartlet with frissee, baby corn & pink grapefruit vinaigrette, served with 06 Reserve Chardonnay
* Corn fed Barossa Valley chicken rotolo with pistachio toast and beetrot jam, beside the 06 Pinot Noir
* Slow cooked North Queensland Wagyu with horseradish mousseline and smoked bacon with the 05 Reserve Cabernet
* And to finish the meal Joe will serve an Almond and quince tart with caramelized cinnamon ice cream.
