In March, Spain's premiere pastry chef, Ramon Morató of Chocovic, will make his first trip to Australia as part of the Melbourne Food and Wine Festival. Ramon will be hosting a number of events delving into the world of chocolate.

Ramon was awarded the coveted World's Best Chocolate Book in 2007 for his book Chocolate. He was also winner of the Best Artisan Confectioner Master of Spain in 1997 - the highest distinction in Spanish confectionary, and has also been a finalist in the Confectioners' World Championship in Stuttgart, Germany.

Ramon is currently head of Aula Chocovic, the first school in Spain specialising in chocolate making and offering all types of courses in gastronomy for professionals. Aula Chocovic engages a range of industry instructors including Ferran and Albert Adrià of El Bulli.

Ramon will collaborate with leading chefs to present the following events:

Learn from one of the world's best chocolate masters
Join Ramon Morató for an enjoyable and informative two hour demonstration designed just for beginners. You will learn about the history of chocolate, the difference between chocolate and couverture and tips on using this luscious ingredient. You will also be able to taste single origin chocolate, the new Selvatica range and the Seleccion range from Chocovic.

Ramon Morató teams up with Mark Best
Ramon Morató and Mark Best will highlight their contemporary approach that utilises the latest techniques and consistently pushes the boundaries. Together they will present an eight course degustation dinner matched to wines selected by sommelier Peter Healy.

Experiencia Sublime Espagnola
Experience a taste of Spain at this degustation dinner by Ramon Morató and Paul Wilson of the Botanical and Half Moon. Indulge with Spanish sparkling wine, canapés, two exquisite Spanish-style seafood dishes from Paul Wilson and two decadent desserts from world-leading chocolate artisan, Morató. Each dish will be
matched to Spanish wines by Scott Wasley of The Spanish Acquisition.

The Best of East and West
This journey of desserts will be presented by Ramon Morató, Darren Purchese and Ian Burch (The Press Club), and Mario Wischnewski (Nobu). Hosted by George Calombaris, watch as these world class pastry chefs showcase Chocovic chocolate in signature desserts drawing on flavours from Greece, Spain and Japan.
Starting with a range of savoury dishes, observe the creation of decadent desserts in a theatrical masterpice of artistry and skill. Enjoy with perfectly paired wines led by sommelier Andrew Phillpot.
