'Un air de Provence'. Talented Chef, Simon Buckley 's is inspired by the South of France utilising locally grown produce together with herbs and flowers from the garden. The contemporary seasonal dishes are surprising in their simplicity and yet sophisticated in their refinement and combination of flavours.
Simon's creations includes:
- Squid ink risotto, Hervey Bay scallop, tiger prawn, pippis, sea urchin, shellfish bisque emulsion, almond, sesame tuile
- King George whiting fillets, fennel mousseline, baby carrots, Mount Martha's mussels, tomato and celery barigoule
- Honey glazed Otway pork belly, spanner crab, tarragon, baby turnip, shitake mushroom and preserved lemon jus
- Roasted Guinea fowl breast, celeriac puree, salsify and Tasmanian truffle jus
- Gippsland venison saddle, braised venison pithivier, parsnip mousseline, beetroot cranberry compote, sauce Grand Veneur
For dessert try the irresistible soft-centered Valrhona chocolate biscuit, almond praline anglaise and Tahiti vanilla bean ice cream.

Philippe Marquet the owner has over 25 years experience in some of the finest restaurants in Paris and the South of France, Ledoyen, Lasserre and Les Ambassadeurs at the Hotel de Crillon.
