Yarra Valley Salmon is Australia's only provider of hand-milked premium fresh water Atlantic Salmon Caviar.
Situated at the foot of the Victorian Alps on the Rubicon River, Yarra Valley Salmon use the fast flowing pristine mountain waters to rear their Atlantic Salmon.
The Atlantic Salmon swim upstream to spawn and only when the fish are at their peak and the roe is at optimum quality, does the harvest take place.
The fish are gently hand milked to release the roe and are then gently placed back in the water.
The precious roe is hygienically processed using traditional recipes into Yarra Valley Salmon Caviar.
The Yarra Valley Salmon product range also includes fresh fillets, whole baby salmon (300-400g), whole hot smoked salmon (300-400g) and whole poached salmon.
Yarra Valley Salmon can be purchased from the "Kitchen and Butcher" produce store at the Healsville Hotel, Healsville, Victoria.
