White Rabbit Brewery is located at Healesville in the Yarra Valley wine region of Victoria.
It was built by passionate brewers to produce a beer, and just the one beer, that doesn't come from the marketing department, uses unusual malts and hops and simply isn't like any other beer.
White Rabbit is an ale with a dark edge brewed with open fermenters, an old method but so unusual now that visitors are invited to the cellar door where "yeast cam" takes you right into the fermentation process.
The first batch of White Rabbit bottles and kegs are due to be released in late June 2009 and will be hopping into bars, restaurants and bottleshops in Victoria and beyond then.
