Opening in November 2001, this convivial vinous establishment Must Winebar has quickly become part of the fabric of Beaufort Street. Behind the elegant 1930s façade a long, polished she-oak bar greets you with an enticing and very personal selection of wines, spirits and beers.
The wine list features over 600 references, strongly representing the wines of France, Italy, Australia, New Zealand, Germany, Austria, Argentina, USA, South Africa and beyond. A dozen whites and as many reds are poured by the glass – Riedel - as well as Sherries and digestives. A cocktail list includes the classics as well as some signature concoctions.
The cuisine of Chef Russell Blaikie is seasonally based, contemporary with provincial French influences. The daily specials offer what produce is in its prime on any given day.
Eat a few snacks at the bar or make a meal of it in the bistro, set over two levels with crisp white table clothes and smart service to match. The mezzanine level can be converted into a private dining room for special events and if you really want something out of the ordinary, ask a waiter to take you upstairs to the Champagne Lounge.
